I found a recipe for carrot cake using essential oils that I thought you would like to try. I love carrot cake and this recipe is wonderful. First heat your oven to 325 degrees then grease and flour your cake pan. You will need the following ingredients:

  • 3 eggs
  • 3 large carrots, grated
  • 1 cup brown sugar
  • 1 teaspoon orange juice
  • 2 ounces ground almonds
  • 2 ounces self rising flour
  • 3 drops orange essential oil

Separate the egg yolks and beat well. Place the grated carrots in a pan of boiling water and cook for five minutes. Remove the carrots from the heat and drain in a colander. Combine the carrots, egg yolk and sugar and mix well. Slowly mix in the orange juice and the orange essential oil, then add the almonds and the flour.

Beat the egg whites until they are stiff and fold them into the cake mix. Pour the mix into the cake pan and bake for 40 minutes. Test with a toothpick to make sure the cake is done in the center. Stick the toothpick in the center and make sure it comes out dry. If there is still cake mix on the toothpick, put the cake back in the oven for 5 more minutes then test it again. When the cake is cool, you can frost it with cream cheese frosting which is even more delicious if you add 2 drops of orange essential oil. Enjoy!
